A cold nose may signify a warm heart in our fellow man, but in hounds, it means that a dog is able to pick up a cold (meaning old)  scent, and follow it.  We wouldn’t be “dog people” if we didn’t enjoy the debate of superlatives, and Coonhound people are no different.
